Sheet pan chicken and asparagus
Ingredients:
- 1 ½ pounds chicken breasts, cut into bitesized pieces
- 1/2 Cup grated Parmesan cheese
- 3 Tablespoons olive oil
- 2 teaspoons garlic powder, salt and
- ground black pepper to taste
- 1 bunch asparagus, trimmed
- 1/2 red onion, sliced
Preparation:
- Preheat the oven to 500°F and line a baking sheet with aluminum foil.
- Place the chicken, Parmesan, oil, garlic powder, salt, and pepper in a large bowl and toss to combine.
- Add the chicken to the baking sheet and arrange in an even layer.
- Return to the oven and turn the heat down to 475°F.
- Roast for 10 minutes.
- Stir the chicken, add the asparagus and onion to the baking sheet in a single layer, and return to the oven until the chicken is cooked through and the onion and asparagus are tender, 8 more minutes.
