Beef tenderloin in mushroom sauce
Ingredients:
- 4 Tbsp. butter
- 1 tsp. canola oil
- 2 (4 oz.) beef tenderloins
- 1 cup sliced fresh mushrooms
- 1 Tbsp. chopped green onion
- 1 Tbsp. all-purpose flour
- 1/8 tsp. salt
- Dash of pepper
- 2/3 cup chicken or beef broth
- 1/8 tsp. browning sauce (optional)
Preparation:
In a large skillet, heat 2 Tbsp. butter and oil over medium heat; cook steaks to desired doneness.
Remove from pan, reserving drippings, and keep warm.
In the same pan, heat drippings and remaining butter over medium-high heat.
Sauté mushrooms and green onions until tender.
Stir in flour, salt, and pepper until blended.
Gradually stir in broth and, if desired, browning sauce.
Bring to a boil, constantly stirring, until thickened (about 1-2 minutes).
Serve with steaks.
