Marinated Tomatoes

Ingredients
• 3 large fresh tomatoes, sliced thick
• 1/3 cup olive oil
• 1 tsp. salt
• ½ clove garlic, minced
• 1 tbsp. chopped fresh parsley
• 1 tbsp. chopped fresh basil or 1 tsp. dried basil
• ¼ cup red wine vinegar
• ¼ tsp. pepper
• 2 tbsp. chopped onion
Preparation
Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours. Yield 8 servings.
