Beer cheese soup September 26th, 2023 Ingredients:2 Tablespoons salted butter1 onion, finely chopped1/3 cup all-purpose flour1 3/4 cups vegetable stock1 cup milkKosher salt and freshly ground black pepper, to taste15 ounces sharp cheddar cheese, shredded6 ounces pale ale beerCrumbled feta, optionalCrusty bread, optionalPreparation:Melt butter in a saucepan and cook onions until translucent.Stir in flour, stock, milk, and salt & pepper.Simmer until it reaches your desired thickness.Stir in the shredded cheddar cheese and beer until fully combined.Serve hot, with crumbled feta and crusty bread.
