Sheet pan sausage, potatoes, and broccoli December 31st, 2023 Ingredients:1 large head broccoli, cut into florets10 ounces baby potatoes, halved1 large carrot, sliced½ red onion, roughly chopped3 Tablespoons olive oil2 Tablespoons whole-grain mustard2 Tablespoons grated Parmesan cheese1 teaspoon dried thyme½ teaspoon dried oregano, salt, and groundblack pepper to taste4 sausage linksPreparation:Preheat the oven to 400°F and line a baking sheet with aluminum foil.Place broccoli, carrot, and onion in a large bowl.Pour in olive oil, mustard, Parmesan cheese, and seasonings.Toss well to coat, then spread vegetables in an even layer on the sheet pan.Arrange sausages in the pan, pushing aside the vegetables so that the sausages touch the bottom of the pan.Bake, flipping sausages and vegetables halfway through until sausages are cooked through, 30 minutes.
