One-pan lemon garlic salmon & asparagus
Ingredients:
- 1 lb. salmon fillet cut into
- 2-3 fillets
- 1 bunch asparagus
- 1 Tbsp. salted butter
- 1 Tbsp. olive oil
- 2 cloves minced garlic
- Zest and juice of ½ lemon
- Salt and cracked black pepper to taste
Preparation:
Heat the butter and olive oil in a large pan.
When the pan is hot and the butter is fully melted, add the salmon and asparagus and season with salt and cracked black pepper.
Cook salmon for about 3-4 minutes on each side.
Add garlic and lemon zest.
Cook for an additional 1-2 minutes or until the garlic begins to brown.
Turn off the heat and squeeze half a lemon into the dish.
Plate and serve.
