Sheet pan chicken and asparagus

Asparagus

Ingredients:

  • 1 ½ pounds chicken breasts, cut into bitesized pieces
  • 1/2 Cup grated Parmesan cheese
  • 3 Tablespoons olive oil
  • 2 teaspoons garlic powder, salt and
  • ground black pepper to taste
  • 1 bunch asparagus, trimmed
  • 1/2 red onion, sliced


Preparation:

  1. Preheat the oven to 500°F and line a baking sheet with aluminum foil.
  2. Place the chicken, Parmesan, oil, garlic powder, salt, and pepper in a large bowl and toss to combine.
  3. Add the chicken to the baking sheet and arrange in an even layer.
  4. Return to the oven and turn the heat down to 475°F.
  5. Roast for 10 minutes.
  6. Stir the chicken, add the asparagus and onion to the baking sheet in a single layer, and return to the oven until the chicken is cooked through and the onion and asparagus are tender, 8 more minutes.
